I have a question about copyright infringement on the internet

More details to this question:
If someone were to create a website that featured stories and/or videos of why people quit or got fired from their employment, could the owner of that website be sued for copyright infringement - because the ex-employee mentioned their ex-employer's business?

No. The law of copyright protects works of authorship, such as books and audio recordings, against unpermitted copying. In your facts, there is no copying. Everyone is free to tell his or her story and, in doing so, to make truthful reference to the places where one has been employed.
