1 contract or many?

More details to this question:
have a business where my clients pay for services by the hourly package. For example.. a 10 hour package of services could be purchased 10 times that year. I have my clients sign a service contract the first they purchase, but I have not made them sign a new one every time they purchase a service. How am I supposed to do this? Could I send a client one agreement and have that cover everything for as long as we work together? A new contract for every single service just seems to be too much. Its kind of like a subscription service.

This is the reason you hire a buiness lawyer to address such issues and draft a contract to protect you and achieve those goals. If you are tring to cobble your own contract together you are already set up to fail.
