Can i cash a check for reimbursment

More details to this question:
I am going to take a person to small claims to pay the $2300 vet bill i received. He caused the injury by racing my 20 year old horse. Our rental agreement said he could only use her as a trail horse. Her injury will be a year of recovery, if she will ever be sound at all. He only agreed to give me $500 dollars. I need medicine and leg wraps for her, can I cash the checkhe gave me to pay for the supplies or if i do does that mean I agree to his terms?

I wouldnt take the risk if you truly intend to sue. It will cost more than $500.00 in legal fees to sort this out if he claims settlement.
