More details to this question:
I own a print shop and a customer hasn't paid his balance on product he already received. The amount owed is $2,450. The order was placed via text and he sent a deposit. There was no other written contract besides the text order request and deposit.

The customer didn't pay for goods you sent and he accepted. Of course you can sue him. Even if there was no contract (and here it seems that there was) you would still be able to recover the fair market value of the goods you sold.
