How do I prove someone breached a contract?

More details to this question:
I hired a machinic to put a motor into a vehicle for about $4,800. I've paid about $2,500 already for the motor. He did not have a contract or receipt for me to proof I paid him. I made him sign and date a paper stating that I paid him the $2,500 for proof. It has been over a month, seems he has blocked my phone calls. I had my friend who was with me during the transaction call him, the phone call went through but to voicemail. She did receive a text from him shortly after stating he will call her back. I am wondering if he has done any work at all or decided to steal my money along with vehicle for parts.If so, how do I prove to gain my money and vehicle back?

You will likely need to hire a lawyer, at some expense, to sue him to obtain a judgment. Problem is if the guy is a shade tree mechanic thief, you made a poor choice in selecting them and giving thgem money up front, and it may just be money lost if you can't actually and efficiently collect it from them.
