I was not paid by a moving company in Boston. The work was under the table, but text messages and emails provide decent enough confirmation, and other people were present for the work done. The total is around $400. I am wondering what kind of evidence I need to make the chances of getting my money back worth the hassle of going to court.

For $400 nothing is worth the hassle of going to court. You will need evidence beyond your oral testimony, like an agreement, photos, or something.
