Securing or recouping a $10,000 personal/business loan

More details to this question:
I made a $14,000 business/personal loan to an individual who has recently defaulted. They have refused to sign a Promissory or to secure the loan based upon their religious cult beliefs, also falsely claiming they were paying, they have not paid in over 4 months. I have all documentation including an unsigned Promissory presented to them multiple times, the cancelled check, as well as stubs for payments made, . The loan was also part of a fund which was to be paid off by way of my rent at their facility, this would possibly make it a consumer fraud issue as well.

You may have a strong case. I have a few additional questions, however, to determine the strength of your claims. When you made the loan, you had it put in a contract and both parties signed? Also, was the money for a business or for a religious institution/purpose? How man payment installments did they actually make in total?
