How can I prove I did not know my license was suspended and what can I expect at the court?

I was stopped for speeding and the officer informed me my license was suspended. I told her I had no idea and she told me that I knew and then said it was suspended on Oct.10 for financial responsibility. So now I have a court date. I did find out it was for not having insurance because it lapsed. I have received notices in the past (I'm poor and so I have to pick and choose what gets paid at times) and I've always handled it so that my license would not be suspended. I never received a notice this time. I had no idea that my license was suspended but I have no idea how to prove it. She put on the ticket that I was knowingly driver with suspended license. Also how likely am I facing Jail time? I s it common? And what if I can't pay the fine given to me for court costs?
