More details to this question:
My mother threw a phone at my head. My husband called the cops and she was arrested, but let out a few hours later! It was on a Friday and we thought she would be in there over the weekend before seeing a judge.

She was probably cited out by the Sheriff (jail), which means given a citation (a form of arrest) that ordered her to come to court on a certain date in the future. This happens very often when a person is charged with a misdemeanor, or a non-violent felony, or the jail is overcrowded - that happens a lot on the weekends. Of course, she could also have posted bail, in which case she would be release as soon as the bond is posted. On the basis of what you have said these seem to be the most logical explanations.
