I am a criminal lawyer and I have never heard the term'informal' probation. If that means 'unsupervised' probation then I believe you can be on probation in two countries, if, for example you were on informal probation in Mexico, and were permitted travel privileges to the United states of America, committed an offense in America, made the Mexican probation known to the U.S. court, and received 'unsupervised probation here, and made the probation know to Mexico, and was continued on probation there in light of the U.S. probation, then, yes you could be on probation (informal or unsupervised ) in two countries.

I'm not sure what you mean by informal probation, but it is possible to be on probation in two different counties, although most judges are probably reluctant to double you up on probation.

Of course you can. Simply commit 2 separate crimes in 2 different counties, and voila.

Yes, it would be possible. Additionally it may be the would will be in violation in either or both counties if you have not informed them of your status in each. It is better for you to tell them that to have them find out on their own. The risk is yours.

Yes you can be on probation in two different counties however if the counties know of each other they may have it all taken care of by one county probation department.

Odd but I guess you can. Usually one defers to the other. But if it is informal probation neither will pick up on the other unless they the other case.
