How do I set up estate to avoid probate when deceased ?

More details to this question:
In a second marriage of 15 years. Prenup is no longer valid so need to probably cancel this. Moving forward need a plan / will that would be fair to all 4 of our children. Is this elder law ? We are 68 and 70.
