I filed a petition to move from NY to FL with my 2 year old daughter. The father I know will object, which I am prepared to go to court and prove my case. But do I have to give the father a written notice about wanting to relocate? Or are the papers I serve him saying I wish to relocate the notice? Or do I need to give him both?

No, the papers you filed to relocate are sufficient to give him notice. You won't be able to leave, however, until the petition is heard.
