Can the defendant request all evidance or documation before appearing or filing an answer?

As the defendant, can I review any/all documentation or evidence the plaintiff has to support his claim prior to appearing or responding?

No.  You will get discovery during the course of the litigation.  If you file a motion to dismiss, however, you may force the plaintiff to reveal the evidence he/she/it has.
