Can the consulate change their decision based on my current income?

More details to this question:
My husband's visa is pending and I am having trouble finding a joint sponsor. However my work contract/salary meets the minimum requirments now to sponsor him fully. Can the consulate change their decision based on my current income now?

Yes of course, you need to submit the last three paystubs, bank statements and an employment letter.

You will need to provide a new affidavit of support with the relevant documentation that will prove your sufficient income to have them reconsider you as the sole sponsor.

If you are making more income now, you should submit a new affidavit of support on form I-864 along with the required supporting documentation.
