My girlfriend applied for L1 visa. Would it be ok if we get married during the processing of documents? This way, she can change the status of marriage. Thanks a lot!

Getting married does not change the status of the marriage nor does it affect the L1. When an L1 holder gets married to a United States citizen, the L1 holder can ultimately apply for lawful permanent residency. If a L1 holder marries a non-citizen, the spouse might be able to benefit from it.

It is OK to marry any time your heart tell you. For immigration purposes, if you are a US citizen and she is not, after marriage, you can file for adjustment of status and she will become a permanent resident.

Tricky question. If she is already in L status, in the US and marries a USC, she can apply for a green card here. If she is applying for L status abroad, then she will need to consular process for her green card but can probably enter the US in L status in the meantime. However if she is in the US, and is about to file for L status knowing she is also applying for a green card in the US, that can be an issue of immigrant intent. I really recommend that you have a full consult with a competent immigration attorney to go over the options and to analyze the full facts of your case.
