More details to this question:
Im adjusting my status as a spouse if a us citizen , my husband had not income In the last 3 years due to mental health issues so we got a joint sponsor , the joint sponsor makes about 66000 annually but she doesn’t have recent paystubs because she was furloughed temporarily due to COVID , she’s sure to resume work in October , does that disqualify her? Will her w2 and 2019 tax returns be enough proof of finances ?

Yes. Provide her W2 and her tax returns for the last three years and that should be sufficient. Also provide a letter from her employer on employer stationary stating what her income is. If USCIS wants paystubs they will send an RFE later but I doubt they will ask.
