Assuming that you mean your period of stay allowed in the country rather than just the validity date of the visa which only controls when you are allowed to enter the U.S., you have 30 days grace period following the expiration of your M schooling. During that time, it would be best if you consulted with an immigration lawyer to go over your available options. Generally speaking, you could possibly request an additional period of time to stay under B-2 visitor status to do whatever you need to have done prior to leaving the States. Also if your fiancée is a US citizen and you decide to marry, you could be adjusted to permanent residence without leaving the country. A visa (the page in your passport with your photograph on it) does not authorize you to stay in the US, it only allows you to enter.  For students, your I-20 controls the period of authorized stay.  As long as you continue to study, you may continue to stay even if your visa expires.  The expired visa will merely prevent you from re-entering the US if you ever leave.  If you are no longer studying, you can change to another status before your current status expires.
