Employment Contracts

More details to this question:
For a small company in Texas, the staff do not have any form of employment contract in place. They were hired on verbal terms. The employer would like to have written contracts for all new staff outlining the at-will employment arrangement, hours of work, wages, etc. Question is what about the existing staff who don't have letters? Can they be issued a letter retroactively?

There is no need for the written contracts to be retroactive, just have the current employees sign them as of today.  If they are employed at-will, their refusal to enter into the written contracts would be ground for termination.
