It recently came to my attention that my manager actually wanted to recruit someone from his last company for my role, which I was recently hired for, but was overruled by his own boss in favor of me. Over the next several weeks, he fired me suddenly after 6 weeks of employment. My manager made a lot of noise, particularly several untrue claims about my performance in client meetings that he pretended to attend, but was actually completely absent from. He then convinced his boss to bring in the former colleague he wanted originally. My offer letter is at-will, but I have enough evidence to show that my manager had intent to terminate me before I even joined the company and signed the offer letter. Is there anything here?

Yes, you could have a claim against your manager individually for defamation and tortious interference with business relations.
