payroll cutoff

More details to this question:
Ten years ago our employer changed the payroll cutoff to the middle of Saturday. Their explanation was because they didn't want to pay us overtime. Our work weeks/pay period are days shift or night: Monday, Tuesday, Friday, Saturday, Sunday, Wednesday and Thursday. Each day is a 12hr shift 7am-7pm; or 7pm-7am. They have been doing this for ten years now and we are starting to wonder if there is anything we as a group of employees can do.

The employer can define the work week, but is limited in doing this just to avoid paying overtime.  The usual thing an employer does is change the start of the week from a Saturday to Sunday or vice versa.  I have never heard them change the work week to start in the middle of the day.  I suggest speaking to an employment law attorney who is experienced with FLSA laws that pertain to overtime issues
