More details to this question:
I got a ticket the other day for "right turn on red arrow" when there is clearly no red arrow. But I didn't make a full stop before proceeding to making the right turn. The officer didn't write that on the ticket. If I challenge the ticket and prove that there's no red arrow (easy to do), could the officer be like "Oh yeah you also ran the red light, let me write you another ticket for that" and get the judge to add more charges? Should I just go to traffic school?

You should hire a lawyer, because the cop wouldn't be able to get away with that if a lawyer is present. The cop's memory can be challenged, because there probably was no report other than the ticket. A lawyer would not be expensive for a simple traffic ticket, and it would save you all the time of going to court all day multiple times.
