Can a grocery store private security pick random customers to follow?

I very much doubt that its random. They usually key in on people who are acting in an unusual manner. Also: keep in mind, the store is a private business and they can take such steps as necessary to protect their business. If you think you are being unfairly singled out, don't shop there.
