can an attorney on record be substituted with another on in a firm they work for

More details to this question:
during phone conferences other attorneys for the firm have spoken for the company that is suing for credit card debt without the Pro SE defendants knowledge

As a general matter, when a law firm appears for a client, the firm may authorize any of its lawyers to appear in a litigated matter. You do not specify any manner in which you were misled or confused by this process. As a general matter, the defendant does not have any say in who will speak for the plaintiff.
