More details to this question:
Me and my wife entered into a verbal agreement with a local contractor to submit a high quote to the insurance company and do the job for less but on completion of the job the contractor demanded the check in full per the quote. We had no written contract, and am now being sued by the contractor, what can I do???

First of all I would avoid doing what you did in your email, which is admit to insurance fraud.  Your contractor is suing for the full amount because he/she knows that you can't admit your illegal oral agreement without risking going to jail.
