teacher is angry at me for asking questions and challenging her authority. As a result, she uses private information I sent her through email, and tell the class that I possibly have a mental disorder. She says she is an expert in the field and she knows what she is talking about. As a result, a student assaulted me in class, grabbed me by the neck, and squeezed really hard.

That sounds like a horrible experience, but a defamation claim is only valid if the statement(s) made by the teacher were false. If they are, then you may have a claim. However, the teacher is not responsible for the actions of a third party (the student), they are liable for your injury.
