Can cops find him with the blocked craigslist email?

More details to this question:
We all have sexual desires and I wanted to try a random night. I posted an ad on craigslist and someone had responded to me. A day later, I get an email saying that the person purposely infected me with an STD. I got tested and everything was negative. A few months passed by and I started getting Herpes symptoms. It's very possible that the person did purposely do this.

I'm fairly certain that law enforcement can subpoena such records. But they need probable cause to believe a crime was committed. It does not seem likely that herpes symptoms which become apparent months after sexual contact can be certainly enough traced to this person. You likely have had sex, for example, with other people. So while the police probably can get the information, I don't think you are likely to persuade them to do so. Good Luck.
