Run over by a truck while on Motorycle

I was at a stop in the road and I was run over from behind by a truck driver not looking where he was going. I miraculously sustained no life-threatening injuries, but I did receive major whiplash (enough to knock me unconscious), and now have a great deal of chronic pain in my neck and lower back area, and a bit of memory loss. I am a 28 year old student, father/husband, and also the owner of a bakery, so I have had to hire more help and purchase equipment to pick up the slack because I cannot work as much as I could before the accident. My wife has had to take over many jobs at my store, which has forced us to leave our son with his grandparents on a daily basis. I am wondering what the logical amount for a settlement would be. Because this has been an absolute disaster! I am well aware that the person's insurance will probably not accept my offer, but I at least wanted to go before them with a fair estimate before I hired an attorney to file a lawsuit.
