What type of lawyer do I need?

More details to this question:
I was just served for a deposition from the defendent (insurance company) for a car accident (hit and run) in FL from 2017. They state I am a witness in the accident but I don't remember the accident. They have a police report (I never spoke to the police and my car was never inspected). They only have my plate number. The plantiff is suing his insurance company for medical bills because I didn't have bodily injury at the time. My insurance company paid for damage to his car which was around $600.

You are not a "witness" - you are a defendant and you know darn well you recall the crash, as you were in it, short of some impairment issues. This sounds like a UM claim and there is an issue here where you are likely to be sued by the other persons insurance company in "subrogation".  You need to hire a civil trial lawyer to address this ASAP.
