Make an appointment with the DMV, take the paperwork you do have, and ask the DMV representative how to best complete the transaction. I would guess they can give you some paperwork for the wife to sign that you can mail to them to complete, but the DMV can best advise you on this.
There are ways to locate people. I think that you need to make the effort, given your investment. Otherwise, there is no way to get the bike registered in your name. Perhaps she can sign off on the title where she is, and that will make things easier. She could also give you power of attorney to sign for her.
