Are any of the online print and fill out NJ Power of Attorney documents, specifically the Durable Power of Attorney, actually binding, reliable and hold up in court? Or Do I have to get a lawyer for the process? Assuming I fill it out properly and get witnesses and a notary.

I strongly advise against using on-line forms for legal documents like this.  There is never a guaranty such a document will be binding if challenged in court, but the odds of succeeding a challenge in court go dramatically up when drafted by competent legal counsel.
